Chapter of Love: Muffins & Cookies



A new chapter for today. Muffins and cookies, pretty stuff we (TanMingMing, Choochoo and me) made ytd. It's weekend and plan goes well, we had our baking day in ChooChoo's hse. The reasons her hse was choosen is ever obvious as her hse is fully equipped with baking utensils! Her mom even bought soya maker which how many hse in Earth would have right except for tau fu fah seller in pasar malam. So, here come our baking session..

Our desserts today:
Chocolate Chips Muffins
&
Lovey Dog Cookies



Started of with well prepared ingredients.

CHOCOLATE CHIP MUFFINS
recipe from Indochine Kitchen.

Ingredients:

280 g all purpose flour
1/2 tsp salt
2 tsp baking powder
120 g unsalted butter, soften
250 g sugar
2 large eggs
125 g whole milk (125 g)
150-200 g chocolate chips, semi sweet

Directions:

Preheat oven to 175 degree celsius. Lightly grease muffin pans.
Sift flour, salt and baking powder twice.
Cream the butter and sugar in a large bowl, until light and creamy.
Add eggs one at a time, beating well after each addition.
Add 1/3 flour mixture alternately with 1/3 milk, beating just until smooth. Continue until flour and milk are all used up.
Mix chocolate chip into the batter. Gently fold in the chips.
Fill muffin cups with 1/3 cup of batter.
Bake for 25-30 minutes, until a toothpick inserted in center comes out clean.
Serve warm.

From recipe, it said make 12muffins but we make up to 17! =) We even bought Fondant icing to make decoration for our muffins! Fondant icing need to be mixed with corn flour and colouring, then roll roll roll and make it flat. Get some cute shape mold (love, ribbon, moon, butterfly) and traced out from the fondant icing.

Creaming the butter with machine! Previously, TanMingMing and I did creaming with those machine hold by hand and the bowl kept running away which make all butter coming out from the bowl. Now, with this brilliant machine, we just need press on button!


And this amazing huge spatula! ( I dont know what's this called exactly). But TanMingMing and I very much amazed with it.

Okay, this is mainly the ingredients and utensils that form our muffins! Please notice the pyramid butter that ChooChoo arranged it so magnificently.

Hand of a painful lady (she insisted she is a lady). Can you notice the veins in her hand? Omg, looks like she grow through painful day likes those lady in the olden days, doing laundry and cooking but she did not.

LOVEY DOG COOKIES!
recipes from Cooking Crave.

Ingredients:

180 g soft butter (room temperature)
80 g MILO
200 g cake flour
25 g corn flour
25 g milk powder
chocolate chips
chocolate rice
Koko Krunch cereal


Method:

Sift cake flour, corn flour & milk powder. Set aside.
Cream butter & MILO in low speed for about 3 minutes. Do not overbeat.
Add in the sieve flour and continue beat it for 1 minute to form dough.
Divide the dough into 10g each. Put three chocolate chips into the dough and roll into balls.
Decorate the dough balls with Koko Krunch as ear, chocolate rice as eye and a chocolate chip as nose.
Baked at preheat oven at 140c for about 25 mins or until it's cooked.
Leave it to cool before storing them in an air tight container.

We made 48cookies from this recipe!

Our lovey dog cookies! Original recipe did not have love on the dog cookies but we added in to make our cookies more lovely! Maybe next try can put other decoration like stars.

The silent wind: Poring Hot Spring

So, this is the continuous from Kundasang. Kundasang was only a one day trip then overnight at Aristo Hotel located at midway of Kundasang-Ranau road. The hotel looks kinda creepy as it alone located all the way up an odd hill with broken gate and silent breeze. What's more is the hotel seems to be fully occupied only by us. The only reason we still stay in there because we had reserve the room online and didn want to waste time to search for new hotel again. Km didn feel good all the way as she was afraid of *something cant be seen* but I had to keep the mood goes well and keep saying nothing be afraid of though I was a little scare too. Oh well, we are still save now and no bad experience =)

Friendly advise: There are many hotels in Kundasang and it's not necessary to book one unless it's peak season. Most of the hotels welcome walk-in customers and only few provide online booking (Aristo is one of the few). Friends told me that Strawberry Farm Hotel which located on the way to Pekan Kundasang is a good one. During strawberry fruiting season, you can visit the Strawberry farm as well. And, it's cheaper than Aristo =.=

The weather was cloudy all the time we in Kundasang. This picture was supposed to has a Mount Kinabalu as the background but peak was covered by cloud most of the time. The only good thing about this hotel is it provide scenic view of the Mount Kinabalu (in good weather).


Km was upset for the unfriendly Mount Kinabalu. But she is even upset that she need to wake up early. Hahahahahha! Look at her unwilling to wake up face!


And I'm happy! I dislike waking up early too but I'm eager to travel around =) Btw, we woke up at 10am which I think it's quite late for a traveler =.=

Then, we head to Ranau for brekkie. Pekan Ranau is definitely better than Pekan Kundasang. It's more well accommodate and better choice of food =) At least, Ranau have KFC! Err, Pekan Kundasang looks somehow deserted that you would doubt that can you even get a bottle of drinking water there. But, Pekan Kundasang has a vegetable market which sell local fresh veges and flowers. Maybe you can buy some beautiful flowers as souvenirs for yourselves =)

After brekkie, it's Hot Spring time! It takes about 40mins to reach Poring Hot Spring from Pekan Ranau and about an hour from Pekan Kundasang.

Bridge to Hot Spring.


I hate bridge especially it's high and there is a river/lake below it. But that's the bridge for right? In short, I just hate bridge. Luckily, this is a stable bridge and when I crossed, there are no ppl shaking it! I hate those children/teenagers who love to run through the bridge and cause the whole bridge shake as if a King Kong cross through.

Butterflies! Yessss, butterfly farm! =)


Hungry butterflies seems like being hypnotized by the food.

Then, we challenged ourselves for the Canopy Walk. It's a famous one and unforgettable experience too, for me at least. Canopy Walk is a journey of bridges connected between the trees in the canopy of a forest.


Tiring! You have to hike up for the starting point of Canopy Walk. Tired and sad face you see =(


This was it! My all time enemy, bridges =/
But being a fabulous friend, I must accompany Km for her first experience in canopy walk.

I tried this during my first semester in UMS with fellow co-curriculum coursemates. I didn enjoyed it much. After the walk, I felt dizzy and I'm the only one who felt dizzy =(

The bridge allowed max 5persons per time. But to avoid shakiness, I walked alone which will be better.


The last one and the most scariest one as it's almost bare below without any cover of trees which will make it seems so high. Grrrrr, I still feel the fear now. I counted my steps for each bridge to distract myself. The last one, longest, 65 steps!

Hectic of walking and hiking, we gave up the walk to the waterfall. We dont even bother to see how far the waterfalls are located as we dont want to walk anymore. I went to the nearest waterfall (1km) , Kipungit Waterfall during my first visit here. It was a small one. The furthest waterfall, Lagangan Waterfall should be bigger but it's 3.4km far far far away. It will take me forever to reach there =/

So, better we enjoyed some hot bathing.

Key chains of cute designs. For the first time, I really think that these key chains are worth buying cause it's really cute. It's not those ugly painted Rafflesia with "Sabah" word. It's wooden key chain with love shape, turtle, utans, lady birds and others adorable designs. 5 for RM10, standard price.


Cheap scarf too! Bought one for mom who always complain that her shop is very cold. Just RM18, much much cheaper than Gaya Street which offer me RM25 =.=

Best part of it, driver goes professional by driving 160km/hr with Kancil.
Hah! Amazed with her skill? Nahh, the truth is the car meter went wrong. It showed 160km/hr when you didn step the acceleration pedal. *shake head*

Okay, that's all about the uphill story.
